Slow Cooker Baked Potato Soup

Baked Potato Soup
  • 2 medium potatoes cut into 1 inch pieces
  • 1 onion roughly chopped
  • 1 and 3/4 cup chicken broth
  • 4 garlic cloves
  • 3/4 teaspoon salt
  • 3/4 teaspoon pepper
  • 6 oz cream cheese
  • 1 cup sharp cheddar
  • 1 and 1/4 cup heavy cream
  • Add potatoes, onion, chicken broth, garlic, salt and pepper to the crock pot and cook on low for 5 to 6 hours
  • Once it is done cooking mash the potatoes then cream cheese, cheddar cheese, and cream. 
  • Top with green onions or chives, sour cream, cheddar cheese and bacon
