Twice baked potato

Ingredients

  • 10 potatoes
  • 1 stick butter
  • 2T chopped chives
  • Salt and Pepper
  • Milk enough to desired consistency
  • Block cheddar

Directions

  1. Preheat the oven to 425°F.
  2. Clean potatoes
  3. Rub the potatoes with olive oil, sprinkle them with salt and pepper, and prick them with the times of a fork.
  4. Place them on a baking sheet or on rack. Cook the potatoes for 45 to 60 minutes (usually takes more if they are large…until their skin is crispy, and sticking one with a fork meets no resistance.)
  5. Let potatoes cool then scoop out and put in mixing bowl
  6. Add rest of ingredients
  7. Stuff shells and bake about 30 minutes at 325
